Tyler and I were getting bored of the usual winter meals (pasta with meat sauce, chicken nugs, turkey sandwiches, crockpot chicken, repeat...) and my friend Hannah was talking about a paleo blog. (Paleo is all about controlling long term blood sugar, thus eliminating carbohydrates, and steering clear of dairy, which works great for me ever since the ole gallbladder went dunzo. Keeping a consistent blood sugar is beneficial to all major body systems--keeps them from going chaotic every couple hours by trying to lower sugar spikes-- and also the hormones that control stress and weight gain/loss.) We thought it was the perfect time to make some recipe changes and also see how a lifestyle change would make us feel. We only shot for a 30 day time frame (because A. it's expensive and B. come on people -- we live in Nebraska and we can't really omit grains for more than 30 days or we'll end up in the looney bin.)We were wintery bored and my dinners started to suck too!
The idea is simple: no processed food. Use fresh and/or frozen stuff. Low carb a must, fat doesn't matter. Lots of omega-3 / good cholesterol (unsaturated fats) like tuna, almonds, salmon, avacado.
While the eating is still in progress, here are some photos of the grub we ate! (Cullen ate what we ate but he still got the dairy and carbs too. And I'm not going to lie: I snuck a fruit loop or two from him at times.)
