We call it Silage at work. (My new job is very influential when it comes to recipes and water drinking..)
Grab a bunch of random greens (butter lettuce--expensive but worth it!!, spinach, green leaf lettuce, cabbage, or grab a couple different premixed bags of salads) and veggies (i used celery, broccoli, green pepper and carrots) and chop 'em up. Chop as fine as coleslaw or finer. The more the better. With a big bowl of this in the refrig, you're sure to have at least three lunches of an antioxidant and vitamin packed option. Just don't eat a lot of it if you're on coumadin: it'll screw up your INR. #lab
Each night spice it up with something special: a chopped chicken strip or grilled chicken breast, toss in a chopped pear or honey crisp apple. (Add fruit the day of so it doesn't brown...) Blueberries or juicy mango with a spritz of lemon juice make a nice addition too. Since my surgery I'm not keen on dairy but you could toss with a TBSP of ranch or buffalo sauce if you're needing dressing.
Almonds, sunflower seeds or cashews add some UMPHH if plain veggies drive ya nuts. A gal at work used a mixture of vinegar, sugar and olive oil (boil and cool) and made hers a slaw.
